Fiesta Salad with Cilantro Lime Rice! 3 recipes for you!

     The other night I was in the mood for fresh vegetables and something delicious.  I decided to make a fiesta salad for dinner.  


Fiesta Ranch:
1 package of Hidden Valley Ranch Dressing.
1 cup mayo.
1 cup milk.
1/4 cup finely chopped red onion.
1/14 cup finely chopped cilantro.
2 table spoons finely chopped Serrano pepper.
salt and pepper to taste.

Shredded Chicken:
1/2 chicken breast, cooked then shredded.
1/4 cup chopped red onion.
2 table spoons chopped Serrano pepper.
1/2 package taco seasoning.
1/2 cup water.
add shredded chicken to onion, pepper, taco seasoning, and water in deep frying pan, simmer together for 15-20 minutes.

Cilantro Lime Rice:
1 cup long grain white rice.
1 1/2 cup water.
1 chicken bouillon cube.
Bring water to boil, add rice and bouillon to water.  Turn burner down to low, cover pan, let cook for 20 minutes.
When rice is finished add:
1/4 cup finely chopped cilantro.
2 green onions, chopped.
Zest of one lime.
Juice of one lime.
Mix well with rice and serve.

Veggies for the Salad:
1/2 head of lettuce, torn or chopped.
1 Tomato, diced.
1 Avocado, diced.
1 can black beans.
1 cup grated Cheddar cheese.

To Plate:
First serve a bed of rice on the plate, next black beans, lettuce, and everything else.  Pour fiesta ranch over the top or just lime juice.
