Canning Applesauce! (Recipe Included)

My kids confirmed they do like applesauce so here is the process.
I didn't add spices or flavoring this go around, Macsen doesn't like flavored applesauce.
I fear something may be wrong with Macsen.  Cinnamon in applesauce is the best!
We plan on adding our applesauce to oatmeal with brown sugar and many other wonderful treats!

The Finished Product!

Applesauce:
12 lbs apples.
3 cups of sugar. 
4 Tbsp lemon juice.
(makes 8 (16 oz) pint jars)

Core and dice apples, (peel them if you'd like, we leave the skins on our apples).  Add apples to a sauce pan.  Cook apples on med/high until apples are tender.  Puree the apples using a food mill or food processor, add apples back to the sauce pan with sugar and lemon juice.  Bring mixture to a boil on med/high heat, stirring frequently to prevent sticking.  Maintain a gentle boil over low heat while filling jars.  Process bottles in water bath for 20-25 minutes.  We put our apples through a food processor before cooking them.  We didn't puree the apples because we wanted our sauce to be chunky.

*Make sure to adjust water bath time based on your altitude.
