Ooey Gooey Cookies!

I baked these cookies the other night.  I found the recipe online, Jane's Garden blog, and decided to change it up.  I made chocolate cookies per the recipe which are fantastic and I made carrot cake cookies with cream cheese frosting, these are to die for!  Baking and cooking is fun, its more fun to change things up and make recipes your own.

Carrot cake cookies with cream cheese frosting!


Recipe:
1 box cake mix (Chocolate)
1 egg
1 8oz package cream cheese, softened
8 T butter, softened
1 tsp vanilla
1/4 cup powdered sugar

  • In a medium bowl, combine cake mix, egg, cream cheese, butter, and vanilla.  Mix well.  When dough forms into a ball, cover and refrigerate for 2 hours.
  • Preheat oven to 350 degrees.  Remove dough from refrigerator, and one at a time, begin rolling dough into balls about 1" in diameter, then roll in powdered sugar.  Place on an ungreased cookie sheet and bake for 12 - 15 minutes. 
  • Remove cookies from oven and transfer to a wire cooling rack.  Using a sifter, sprinkle with powdered sugar.

Makes about 36 cookies.
